Every dose of coffee grounds contains a spectrum of particle sizes, from fines to boulders. When coffee enthusiasts discuss grind size for certain brewing method, they often use "microns" (µm) which refers to the peak value of a particle size distribution (PSD) curve.
Measuring PSD precisely though requires specialized equipment. Besides, PSD in reality varies depending on grinder model, burrset design, burrs condition, calibration, alignment, etc., meaning that no two grinders can have identical PSD for reference use. I think it would be nice to have a "reference point" when I need to dial-in a brew, so I asked Mahlkönig for the grind range of ek43.
According to the specifications of ek43 "coffee" burrset, grind size ranges from 180 to 1,100 µm. As my ek43le dials from 1 to 16, each number represents approx. 60 µm increment. That gives me a great starting point to dial-in coffees using different brewing methods. Of course, the values do not represent true coffee fineness, but are handy enough as a quick guideline.
