Finca Milan is famed for its culturing process (i.e. co-fermentation) that intensifies the juiciness and sweetness of fruit notes. Located at 1,600 masl in the Risaralda Department, the farm is currently managed by Julio Madrid, the third-generation producer. He dedicated himself to high quality production, and the Maypop culturing is his success from years of experimentation.
The co-fermentation involves mixing depulped coffee cherries with crushed maypop fruits, yeast and pre-cultivated microbes in a tank for 6-8 days when the anaerobic fermentation takes place. Fermented beans are then washed and sundried for 15-20 days to achieve the desired moisture level.
The cup has a distinctive impression of cream soda fruit punch, and recalls tropical fruit notes of pineapple, mango and lychee. The cream soda sweetness is lingering with a hint of watermelon finish.
