Ajígesha is a rare coffee variety discovered by José Herman Salazar during a harvest in his farm, La Guaca at 1,800 masl. José originally named it as "bourbon ají" for its distinct sweet and spicy scent (ají means chili pepper in Spainsh) and thought it might be a mutation of his pink bourbon trees.

Further to the great success of placing 6th at the Colombia Cup of Excellence in 2021, José and the organizers decided to conduct genetic testing on ají, and realized it was actually a mutation of Ethiopian landrace with traits of gesha (thus renamed as ajígesha).

The flavor profile of this lot is exceptionally tangy and sweet. In addition to its signature fragrance similar to pink pepper berries, there are vibrant fruit notes of peach and citrus with watermelon-like sweetness. Mouthfeel is also creamy and clean, living up to our expectations from a COE producer.
