These days I still use v60 from time to time.

The fun of traditional pour over is irreplaceable - it releases me from the shackles of perfectionism and lets me re-immerse in the very moment of hand-pouring. ( Let’s put aside our pledges of consistency and target sometimes )

As a bypass brewer, v60 is all about finding balance between water level and agitation. A fast, continuous water stream increases water level and introduces turbulence. Slurry temperature is more stable, and agitated grounds are extracted evenly. Excessive agitation however can cause the bottom of filter to be exposed, it encourages bypass and clogging.

In comparison, slower water stream or pulse pouring can have turbulence under control. Shallower agitation mitigates filter clogging while the evenness of extraction may be sacrificed if channeling happens. A gentle swirl can help curing channels and is recommended after each pour interval.
