The 3 things I believe about pour over:

  1. There is no "perfect" brewing method that suits all coffees and palates. Some coffees shine at higher strength / ratio than others, and your "meh" cup can be "excellent" to someone else.

  2. There is indeed brewing method (or brewer) that achieves highly efficient extraction regardless of taste preference. It means the extraction is very even with little to no bypass, and has relatively high tds and extraction yield.

  3. Highly efficient extraction is a great tool, but does not mean it will always present the tastiest version of coffee (read #1 again). I like to use this brewing method for qc (percolation) in addition to cupping (immersion) to get a better picture of a coffee's potential.
